At Star Hollow Farm we grow a wide range
of vegetables, most of them in small quantities. Within each crop we typically
plant multiple varieties. Potatoes are our best sellers, followed by tomatoes and garlic.
We also grow a dozen or so types of herbs.

To give you a general idea of when different produce items should be available

version). It represents our
growing conditions in Pennsylvania, and of course varies somewhat from year to
year.
WINTER PRODUCE
In January, February and March, when we are just doing our online market and
CSA, we're at a pretty low point for local produce. We focus then on storage
crops – primarily roots and apples – but also have some small greens and herbs
from our and neighbors' greenhouses. One friend even grows tomatoes all through
the winter in his greenhouse. Of course, there are questions and concerns about using fossil fuels to heat
greenhouses so you can eat locally – if not seasonally – here in the
Mid-Atlantic region, but our rationale is that it helps keep us and our
neighbors in business, and having some of these greenhouse “delicacies” in
mid-winter helps us to sell more of our storage crops.
